More Make ahead Munchies.

Rounding out the Suggestion Box for foods to make ahead and keep in the fridge for those moments of munchie weakness are pancakes and bowls of cooked beans.

I Cruised Online last night and love, love, love the search engines for finding Recipes.  There are options for pancakes made from millet, buckwheat, brown rice and amaranth that you and I can actually have.  In place of bread we can use pancakes as a roll up for making sandwiches similar to pitas or injera.  Since pancakes are soft its best to use a filler that can be gently rolled such as leftover stew or shredded curried chicken.

Beans, beans and more beans. There are so many kinds that exploring them should keep you busy for awhile.  My favorite are the garbanzo beans otherwise known as chick peas.  Versatile as hell you can use chick peas for a bean salad, as part of a roasted vegetable roll up or even plain they are pretty amazing.  Curried chick peas will blow your mind and offer a fabulous source of protein for vegetarian entrees. Add some roasted garlic and spices and you have a quick dip on hand for crackers so keep on hand and keep those munchies at bay!

On a personal…Monica and I drove into Vancouver today- a couple days before she heads out to the Gulf Islands on her ‘Earthship Survivor’ tour of duty with Michael Reynolds.  She is ‘cited’ about her ‘venture’. (translation..excited about her adventure) but she turns into a little kid when she’s ‘cited’ and loses the first vowel of each word starting in a vowel.  Anyway, I will make the best (of the worst) choices I can while on the road and in the big city.  I can feel myself slipping (I know you noticed it too so thanks for not putting my nose in it) and its getting harder not to just call it done…but the work is still not over.

Pre-Breakfast:

Acidophilus + Herbals

Breakfast:

‘Oma’s Noodles’ (buckwheat) with Scrambled Eggs + leftover Spaghetti Sauce

Lunch:

Egg Salad cradled in lettuce leaves + Coffee

Dinner:

Thai food-Pad Thai, Green Curry Chicken + white rice + fizzy
