Soy Cheese Doesn’t Melt!

I’m not a huge fan of the stuff as it tastes like sawdust mixed with something else.  Really it’s a knock off of the real thing and a poor substitute at that.  I prefer Rice Cheddar Cheese…at least it has a wee bit more flavour. Unfortunately the variety available to me on Commercial Drive in East Vancouver hasn’t made its way into the chain stores here in the BC Interior.

I have noticed a very interesting Sugar Low as I write this portion of the post,shortly after lunch. I’m so Fogged In right now I can’t even remember if I had tea this morning with my eggs.  If there was a buzz to accompany the haze I’d think I was drunk.  I’d say this is similar but without the giggles. I’m determined to finish off all the tomato* based products I bought or made (*you see tomatoes aren’t allowed but I didn’t know that..silly me) and use this two week period as my ‘Trial and Error’ time where I work out the bugs.  It may net me more time on the Chain Gang but that’s ok…..better to ease into the abyss in increments.  That sounded negative didn’t it?  No, no really…I’m having a great time.

Pre-Breakfast:

Acidophilus + Herbals with Water

Breakfast:

2 soft Boiled Eggs with Organic Salsa

Lunch:

Organic Salsa on Rice Crackers topped with Jalapeno Soy Cheese + leftover Guacamole

I felt like having ‘Appies’ and Monica refers to them as ‘Mexican Pizza Melts’ but that’s not really true because SOY CHEESE DOESN’T MELT! Not in the microwave. Not in a cheesy cave. Not with some lovin’ and not in my oven. So says Cat in the Hat.

Check out Monica’s photos…they “Blowed up in the ‘Nuker’ real good.” Maybe some harsh words would make them melt but I haven’t found the winning combo yet. I’ll keep cursing at it. Maybe that will help.

Dinner:

Spaghetti Squash with Vegetable Marinara Sauce , a great Vegetarian Entree.

Notes: Whoa Nellie!  After supper I’d say I was bloated.. but ’6 months along’ more accurately describes what my stomach is doing right now.  Be afraid. BE VERY VERY AFRAID.
