Hearty Winter Soup/Stew of Beef, Tomato and Quinoa:

Hearty Winter Soup, Stew, for a Candida Cleanse Experiment by Nicole Chayka for Middle Earth Home

  • 3 lbs beef soup bones
  • 1 lbs roast beef slivered
  • 1 yellow onion
  • Dried chives
  • Roasted garlic cloves (3)
  • Peppercorns
  • Sea salt/pepper
  • Montreal steak spice
  • Onion powder
  • Chili seeds (pinch)
  • Apple cider vinegar
  • 2 cups tomato* juice or puree
  • 2 cups mixed chopped veges(celery, cauliflower, green beans, green onions, broccoli)
  • 1 cup leftover cooked cabbage from cabbage rolls- pureed
  • 1/4  cup raw Quinoa or 1 cup cooked
  • Stevia

Cover bones with water to ¾ of pot. Add everything but last four ingredients. Simmer on low for three hours. Remove bones. Siphon off excess fat floating on top. Add more water if desired at this point then add Quinoa, cabbage, and mixed chopped veges for 20+ minutes. Come back and add more salt/vinegar/stevia towards the end to tart up the flavour to your tastes. Allow to cool and freeze.

*ok I messed up on the Quinoa.  I added a full cup of the raw stuff to the soup and its more like stew it’s so thick.  For future reference either lower the amount added to the pot or used pre-cooked grains so you have a ‘gefuhl‘ for how much you are putting in.  Doh!

Tip#1- If cabbage is fresh I recommend adding it in the beginning of the cooking process to flavour the stock.

Tip#2- Sweet takes the edge off the acidity of tomatoes so add stevia towards the end to your taste.  Likewise vinegar adds tanginess so sneak up on it a little at a time.

*Tomatoes, were  in question for the Candida Cleanse. I didn’t find out concretely until day 10 that these were on the NO List. So until day 10, I included them in my diet, especially Tomatoes, as they were the basis for so many dishes. They are okay to include, however, in later stages of the Cleanse.
