Cabbage Rolls

1 large Green cabbage ***  (frozen, then thawed the day of cooking)

Cabbage Roll Filling:

Mix all ingredients together and put aside:

  • 2 lbs hamburger + 1 cup long grain basmati rice
  • 1 medium onion minced
  • 1 red pepper minced
  • dash tobasco
  • lemon juice
  • sea salt/pepper
  • braggs
  • Montreal steak spice
  • Onion powder
  • Garlic clove minced
  • An egg
  • ½ cup of tomato sauce      (ingredient of  the stage 2 or 3 of the Candida Cleanse)

Tomato sauce:

  • Can of tomatoes (28 oz) or tom. Juice or fresh purred
  • Dash tobasco
  • Lemon juice
  • Braggs
  • Roasted garlic cloves (3)
  • Onion
  • Montreal steak spice
  • Mace
  • Basil
  • Chives

Now get out the blender and give them a spin.

Fill leaves with filling mixture and roll leaf tucking the sides into itself. (tip: plane the center vein of the leaf to make it easier to roll) Now line the bottom of a roast pan with leftover leaves and pour tomato sauce over a single layer of cabbage rolls.  Top with more leftover leaves to prevent rolls from burning and put on lid.

Cook @350 degrees for first 30 minutes then lower to 325 degrees for about 1 to1 ½ hours or til rice has absorbed most of the liquid but the pan isn’t dry.

Cabbage rolls like most things made with tomatoes are better the next day so make ahead of time for full flavour.  In case you like taking things already made out of the freezer I suggest you make extra because these babies store well.  The reason you only cook a single row of rolls at a time is because the top ones don’t get enough juice to properly cook the rice which turn out half raw and crunchy…two words you never want to say in the same sentence as ‘cabbage rolls’.

Another tip to my embarrassment was given to me by a French friend…seeing as how I am of Ukrainian decent and cabbage is our thing…well…another chance to perfect humility.  Here it is…Freeze the cabbage-THEN thaw it the day you need it. This will save you a HUGE hassle getting the leaves limp.  Of course you could do it the traditional way  par-cooking the cabbage in a pot of boiling water, removing the leaves one at a time, and nearly scalding yourself  if the steam doesn’t get you first.  So freezing wins?  Yeah…me too.

I gotta say the meal tonight was a winner.  Perhaps it’s the ‘Uke’ (Ukranian) in me that goes for the combination of Cabbage and Tomatoes…they DO play nice together.  Absolutely do not skimp on a mountain of Sour Cream or Plain Yogurt.  It is unnatural and a travesty not to drown them in this condiment.  Who ever eats a Cabbage Roll, Borscht or Perogies without Sour Cream is doing it wrong, and should have their license to eat them revoked.  Just saying.
