Chicken and Vegetable Stir Fry (over steamed Gai Lan):

  • 2 chicken breasts cubed
  • Sesame seed oil +Roasted garlic  or
  • Grape seed oil + slivered Ginger
  • Green or red onions
  • Braggs
  • Stevia if desired
  • 1/3 cup Chicken stock
  • Broccoli flowers
  • Cauliflower broken into small pieces
  • Asparagus
  • Snow peas
  • Radishes cut to match sticks
  • Celery
  • Zuchinni slices
  • Peppers sliced
  • Couple pats of butter
  • 2 tbsp rice flour in cold water to make a paste
  • Apple cider vinegar
  • Gai Lan (a Chinese vegetable cross somewhere between broccoli and spinach)

In this meal vegetables are intentionally left crispy (but not raw) with their colors and nutrients in tact. If you have a WOK fantastic!  I do not…so I will use an ordinary soup pot to cook this dish in starting with the meat.  Heat pot on medium high, adding sesame seed oil, roasted garlic and chicken stirring occasionally. When the meat is cooked on all sides with no pink showing add and heat up chicken stock, and braggs.  Add remaining vegetables (less the Gai Lan) and put on lid to steam lightly about 20 minutes.  When cooked add rice flour paste to thicken and cook an addition couple minutes to thicken sauce.

Meanwhile separately steam Gai Lan for 30 minutes in a rice cooker/steamer and set aside a portion on each plate.  For those in stage 3 feel free to drizzle ‘oyster sauce’ (made from mushrooms and slightly sweetened) over your Gai Lan as they do in Chinese restaurants during Dim Sum.  Spoon the chicken/vege mixture over the bed of Gui Lan and call it done.
