Parsnip Fennel Soup

A Candida Cleanse Stage 1 meal

  • 6 cups parsnips (sliced into 1” rounds)
  • 2 fennel bulbs (stalks n’ core discarded) chopped into pieces
  • ½ tsp sea salt (+ extra pinches to sauté)
  • Black pepper to taste
  • 2-2.5 tbsp oilive oil
  • 1 cup onion chopped
  • ½ cup celery chopped
  • 1 tsp mustard seeds
  • 2 cups vegetable stock
  • 4 cups water
  • 1 tsp fresh rosemary, chopped
  • butter

Preheat oven to 350 degrees.  In a bowl toss the parsnip fennel, sea salt, and a few pinches of fresh ground black pepper with the 2-2.5 tbsp olive oil.  Place on two baking sheets lightly oiled. Back for about one hour, rotating the sheets from top to bottom half way through and tossing once or twice throughout, until the parsnip and fennel are tender and have light golden color.

As it finished cooking heat remaining tbsp of  olive oil in soup pot and over medium heat sauté onions, celery and mustard seeds with a pinch of sea salt and pepper for 5-7 minutes or until translucent. If they start drying out add a little water or stock.  Then add stock, water, roasted fennel, and parsnip to the pot and blend with a hand blender (or transfer to food processor and puree).  Return mixture to soup pot and bring to a boil, then immediately reduce to low heat while stirring in rosemary, and season to taste with salt/pepper.  Cover and simmer 5-10 minutes.

*tip about the Rosemary….either grind it up into a powder or put it in an herb sachet so you can remove it when the cooking is done. I made the error of NOT putting it in the cheesecloth sachet……and now I have this tough little sprig like needles to deal with. Very pleasant (not).
