Roasted Butternut Squash Soup

Roasted Butternut Squash Soup:
A Candida Cleanse Stage 1 meal
- 2 small butternut squash (6-7 cups cooked)
- 3 cup cooked/pured pumpkin ** pumpkin has been substituted for yams
- 2 tsp olive oil
- 1 cup red or white onion chopped
- ½ cup celery chopped
- sea salt/pepper
- 3 garlic cloves chopped
- 1 tbsp fresh ginger grated (or 1 tsp dry ginger)
- 1 tsp curry powder
- ¼ tsp coriander powder
- ¼ tsp cinnamon
- 4 cups vegetable stock ** I will use chicken stock
- 1-1.5 cups water
- Biryani curry paste -2tbsp
- 1 cup of butter (yes I said one freakin’ cup)
- Braggs (lots)
Preheat oven to 400 degrees and bake squash for an hour or until soft when pierced. Remove from oven and let cool enough to handle. Prepare the other ingredients while squashes are baking and cooling. Once cooled slice squash in half and scoop flesh from the peels (after separating
seed and stringy bits from squash).
In a large soup pot heat the olive oil and over medium heat sauté the onion, celery, sea salt and fresh ground black pepper. Cover and cook for a few minutes. If the mixture gets dry add a little stock. Stir in remaining spices. Cover and cook for another 4-5 minutes, until the onions soften.
Add stock, water, squash and transferring everything to a food processor (or use a hand blender in the soup pot) puree the soup until smooth. Add extra water if desired for a thinner soup. Bring the mixture to a boil, adding curry paste, butter and Braggs to taste.
Then reduce heat to low, cover, and let simmer for roughly 40 minutes. Season to taste with extra sea salt and fresh ground pepper as desired.
If necessary to blend once more to a creamier consistency allow the soup to cool, then use blender before storing.
