Almost Texas Chili:

  • 3 lbs boneless chuck, cut into 1 inch cubes
  • 1 yellow onion minced (apparently cowboys don’t like onions but I added one)
  • 8 cloves roasted garlic-mashed (original recipe calls for 2-3 the wimps!)
  • 6 tbsp chilli powder
  • 2 tsp cumin
  • 3 tbsp quinoa flour
  • 1 tbsp oregano
  • 3 cups beef stock (try for organic stock but all I had was bouillon)
  • Sea salt and pepper
  • 1 ½ cup crushed tomatoes* (my embellishment)
  • Sour cream or plain yogurt
  • Lime wedges

What makes this ‘almost’ Texas chili is the addition of Tomatoes.  Apparently, real Cowboys don’t have them in the recipe, but to me chili ain’t chili without them.

Heat oil in a 4 quart pot over medium heat.  Add beef and cook til all the pink is gone but not browned.  Now add onions, garlic, and oregano to pot and give a stir. Separately in a bowl combine chilli powder, cumin and flour together.  Sprinkle half evenly over meat in pot. Stir beef and add the remaining half.  Stir again and add beef stock to the pot, stirring again. Add salt/pepper, and tomatoes bringing them to a boil stirring occasionally.
Reduce heat and simmer partially covered for 2.5 hours stirring occasionally.(add a cup of water if it thickens too much around the 1 ½ hour mark)  Cool thoroughly and refrigerate overnight.  Reheat and serve with sour cream and lime wedges, or over a bed of Quinoa.

*Tomatoes, were in question for the Candida Cleanse. I didn’t find out concretely until day 10 that these were on the NO List. So until day 10, I included them in my diet, especially Tomatoes, as they were the basis for so many dishes. They are okay to include, however, in later stages of the Cleanse.
