Thai Coconut Curry Chicken

Thai Coconut Curry Chicken:
Coconut pushes this dish into a Stage 2 or 3 of a Candida Cleanse:
- Chicken breast cubed (3-4 breasts)
- Red pepper chopped fine
- 3-4 cans coconut milk*
- 1 cup Chicken broth
- Ghee (1/2 cup)
- ½ head of Cauliflower broken into small flowerettes
- Fresh Snow peas (2 pkgs) veins removed
- 1 large yellow onion minced
- Fresh ginger minced (2 tbsp)
- Salt/pepper
- Thai red/green/or yellow curry paste (3+ tbsp)
- Apple cider vinegar to taste
Cook chicken and onion first for an hour in coconut milk, butter, broth and flavourings. Add veges for a further ½ hour or until tender to your liking.
Serve over bed of brown rice or Quinoa. Freeze the leftovers. (keep some leftover curry sauce for breakfast scrambled eggs. It’s yummy!)
(p.s.) Brown rice is usually 1 cup rice to 2 cups water. I use my rice maker by steaming it for an hour and letting it sit a further 10 minutes.
Quinoa is a 1:1 ratio and takes about 20 minutes to cook. Detailed instructions are on the “How to cook Quinoa” page.
*Coconut was in question for the Candida Cleanse. I didn’t find out concretely until day 10 that this was on the NO List. So until day 10, I included it in my diet. Coconut is okay to include, however, in later stages of the Cleanse.
